Homemade Pesto Sauce Recipe
Ingredients: 4 garlic cloves (quartered), large bunch of basil (a handful), 3 tbsp pine nuts, 2 oz grated parmesan cheese, 2 tbsp lemon juice, 1/2 cup extra virgin olive oil.
Equipment: Mortar and Pestle (Extra Large Size is preferable), spoon.
Instructions: Put garlic cloves into mortar. Grind into a garlic paste. Add basil, a few leaves at a time and continue to grind. Then add pine nuts, 1 tbsp at a time, and continue to grind. Add parmesan cheese, one handful at a time. Grind in mortar until fully combined and paste-like. Add lemon juice and mix until fully combined. Then add olive oil, a little at a time until fully mixed in. Then add to the pasta of your choice, serve and enjoy!

Homemade Guacamole Recipe
Ingredients: 1/4 white onion (finely chopped), 1 tomato (finely chopped), 4 cloves garlic (minced), 2-3 tbsp fresh cilantro (chopped), 1 green jalapeño pepper (finely chopped, with seeds and white pith membranes removed – when working with jalapeño, you might consider using gloves as it can burn a bit when using), 1/2 lime (sliced into quarter wedges), 3 ripe avocados (halved with pits removed),
Equipment: Mortar and Pestle (Extra Large Size is preferable), spoon.
Instructions: Scoop the avocado meat out of 2 of the avocados, and add them to the mortar, then smash until creamy. Then add onion, garlic, and jalapeño and mix together with avocado (pounding and grinding as you go). Add third avocado, but instead of smashing it, go a little lighter to make the consistency a little chunkier, to add texture. Then add tomato and cilantro and gently stir in with a spoon. Squeeze two quarter lime wedges into mortar, then gently mix all ingredients together with spoon until fully combined. For presentation with chips, just leave guacamole in mortar, then add the chips of your to another neighboring bowl and enjoy! NOTE: If you have leftovers, please store in an airtight container in the refrigerator. You might want to add 1-2 tsp of lemon juice and stir in gently. It should keep from 2-5 days (but please check on it to ensure food safety).
